Experience the culture and cuisine of the Philippines with a traditional kamayan, or boodle fight, feast in this cooking class. Chef Nancy shares the history of this authentic feast where food is arranged on banana leaves laid out in artistic patterns and then eaten with the hands. Courses include fried, sautéed, grilled and a steamed basket. You'll prepare recipes such as pork tocino, chicken barbecue, vegetable fritters, hand-chopped milkfish, spareribs, marinated chicken wings and more.

Salty and Sweet Meats
With pork tocino, chicken barbecue, grilled pork belly and fried adobo
Steamed Basket
With prawns, mussels, milkfish, okra, long beans, corn and rice
Fried Course
With pork rind chicharrons, vegetable fritters, egg rolls and fried rice
Sautéed and Sizzling Course
With hand-chopped milkfish and chicken liver, and vegetables
Grilled Course
With spareribs, marinated chicken wings and prawns

Meet your chef
More commonly known as the Adobo Queen, Chef Nancy was born and raised in the Philippines as well as in the restaurant industry. Her family has owned and operated an authentic Filipino comfort food restaurant in Manila where she began cooking at a young age. Today, Chef Nancy is a freelance multimedia cooking show host as well as the host of a variety of fun and interactive culinary experiences that champion authentic Filipino fare.
