If you've wondered how to cook seitan, a wheat-gluten meat replacement, but have never given it a try, this informative cooking class with Chef Jenn is the perfect time to give it a go. You'll learn how to use this ingredient in a savory dish to create a hearty meat-free dinner. First on the menu for this class are crispy chickpea cakes served with lovely crème fraîche. Then, you'll pan-sear the seitan and serve it with potatoes, asparagus and plenty of Parmesan. For dessert, you'll prepare a vegan crème brûlée topped with fresh berries.

I enjoyed Chef Jenn's teaching style and the class, but I would have liked more variety in the ingredients offered. We were taught to make 3 or 4 different styles of sushi and everything was made out of the same two ingredients - avocado and smoked salmon. I don't like smoked salmon and that was the only fish offered, so I didn't eat anything I made. To me, sushi is primarily raw fish, and I was excited about enjoying the food.
