Learn how to use every part of a duck to prepare dishes that are both sweet and savory in this cooking class with Chef Henry. You’ll gain the insight of a pro butcher while learning to make dishes using the most delicious parts of the duck. You’ll assemble a crostini appetizer using a duck liver mousse, pan sear a duck breast in a black pepper-honey glaze, and submerge duck leg in fat to cook until juicy and tender. You’ll even use left-over duck fat to make dark chocolate cookies.

Chef Matt is really passionate about using local and sustainable ingredients. Explained everything really clearly. Gave loads of helpful general cooking tips. Cleaned as he went and explained while he was doing it. Said 'an ounce of sauce covers a pound of sin' which is the sort of advice I need! Finished dish looked incredible, restaurant quality for sure and clearly has loads of teaching experience.
