Cooking Class: Scratch-Made Chinese Dumplings

Chef Keith will teach you how to make Chinese dumplings from scratch, from wrappers to fillings, in this hands-on cooking class. First, sharpen your knife skills as you chop up napa cabbage and fresh vegetables for a Chinese chicken salad. Then throw together a simple dough to make gyoza and wonton wrappers. After learning how to cut the dough and special techniques for filling each dumpling, you'll pan fry the potstickers and try your hand at steaming the wontons in a bamboo basket. Then you'll get to try your little creations with classic dipping sauces on the side.

This "cooking class" felt more like a casual dinner experience than an instructional session. The recipe-following approach lacked the expected teaching and proactive engagement with skills and ingredients. Unfortunately, there were off-putting transphobic comments made by the chef, making the atmosphere uncomfortable. I interjected since it is not ok to make comments degrading someone’s identity because of your lack of understanding. Also for the price, I came to cook not talk politics or feel uncomfortable. I was also surprised by some of the prep like washing lettuce, I get this needs to get done but everyone knows how to wash lettuce, focusing on the other aspects that most people don’t know would have been more beneficial. I do want to highlight that the end products were delicious. Hopefully changes are made to the format to elevate the experience.

Keith was great at demonstrating techniques and giving instruction and tips! His wife was very helpful as well. The sushi rolls were fun to make and delicious, especially with the super amazing fresh tuna. My husband and I enjoyed every minute!
