Chef Agnes brought all of the ingredients we needed, and she was willing to make it work even if we didn’t have all of the ideal equipment (she mentioned that a hand mixer could be used if we didn’t have a stand mixer). She was knowledgeable, friendly, funny, and gave helpful feedback. She paced the class really well to make eclairs and cream puffs in two hours, including making the craquelin, choux pastry, pastry cream, and chocolate ganache. We had a blast! You should budget time after the class to finish filling/dipping the remaining pastries and to clean up.
