Learn the best ways to craft vegetable-based versions of your favorite meals in this interactive cooking class. Chef Stacy will guide you as you cook up five flavorful courses that will be easy to make at home, even on busy weeknights.
Kick things off with a salad that makes healthy feel indulgent, consisting of kale, apples and avocados with a sweet and tangy blueberry ginger dressing drizzled over top. Next, craft a homemade soup that masterfully combines the creamy flavor of white beans and refreshing notes of fresh Italian herbs. Make a classic family-style lasagna that can be tailored for vegans and vegetarians alike without compromising on flavor.

Kale Salad with Blueberry Ginger Dressing
With avocados, apples, pumpkin seeds and goat cheese
Hearty Minestrone Soup
With white beans, vegetable broth, onions, garlic, carrots, celery, zucchini, tomatoes, Italian herbs and spices
Family-Style Lasagna
With tomato Sauce, mozzarella, Parmesan cheese, ricotta cheese (or tofu), ground meat (beef, sausage, ground turkey or tofu) and fresh basil
All ingredients can be substituted for vegan/vegetarian/dairy-free alternatives

I loved learning how to make egg rolls, and will definitely do it again! I would say, you do need to know a base knowledge in cooking to make these classes successful.

Meet your chef
Chef Stacy is a graduate of San Diego City College's culinary school and a proponent of fresh, wholesome fare. After finishing her course, she soon launched her own business offering cooking classes to clients around California. Chef Stacy works with a diverse array of clients across all culinary backgrounds and experience levels. She prides herself on her friendly, down-to-earth approach to teaching that makes any student feel comfortable.
