What You’ll Do

You’ll start by preparing protein-rich fillings with fresh ingredients, then practice folding techniques to make sure each little parcel is perfectly sealed, beautifully shaped and ready for its big moment. You’ll also prepare Mediterranean-Japanese ravioli-style dumplings made with durum wheat semolina dough and a savory filling of ricotta cheese, lemon-zest chicken, ginger and scallions.
