Boost your kitchen confidence as you explore time-honored cooking techniques and the rich Mexican spices that characterize these crowd-pleasing traditional dishes. Begin with Yucatan-style barbecued pork shoulder prepared with citrus and achiote. From there, master succulent shrimp enchiladas with homemade garlic cream sauce and manchego cheese. For your entrée, serve up tender pork ribs with green salsa and beans seasoned with garlic, cumin, tomatoes, chiles, coriander and Chihuahua cheese. Finish with a classic dessert: rice pudding served with fresh strawberries and warm cinnamon.

Chef Luis is a chef with a vast cultural background, having grown up in both Cuba and Spain before moving to the U.S. He can speak English, Spanish, Italian and French, which informs his international approach to cooking. Chef Luis is not just a great chef but also a talented sommelier. Gourmet food and wine pairings are his specialty and a passion that he transfers to all of his students.
