Throughout the class, you'll work your way through a contemporary four-course menu, learning everything from the art of smoking foods to the trick to sous vide cooking. For a Parisian gnocchi dish, you'll make handmade gnocchi and create a smoked cashew beurre blanc, which will add a depth of flavor and richness to the dish. Then, you'll learn how to sous vide a heritage pork loin, ensuring that it's cooked to perfection and bursting with flavor. For dessert, you'll get to create a tantalizing dish of poached nectarines for a delicate pastry with a delicious balance of sweet and tart flavors.
