With a little imagination, even the most indulgent dishes can be reinvented with an eye on nutrition. You'll prepare meatballs that recreate the flavors of buffalo wings, salmon roasted with garlic and herbs and a cauliflower purée peppered with sweet peas. And because dessert can be healthy too, finish up on a sweet note with creamy Greek yogurt cheesecake bites.
