Create a delectable Mexico-inspired menu in this Christmas cooking class. First, you’ll make melty queso infused with spices and the warming flavors of poblano peppers. Then, create a zesty take on classic lasagna by making fresh pasta sheets from scratch to be layered with corn, zucchini and cheese. You’ll also whip up a fresh salad of bright citrus fruits, earthy beets and crunchy jicama tossed in a gourmet dressing. For dessert, bake classic shortbread cookies with the delightful rich flavor of Mexican hot chocolate.

Queso Fundido and Poblano Vinaigrette
With cheese, onions, spices, chiles, tortilla chips and vegetable spears
Corn and Poblano Lasagna
With homemade pasta sheets, chiles, zucchini and cheese
Ensalada de Noche Buena
With citrus fruit, jicama, beets, pepitas, pomegranate seeds and dressing
Mexican Hot Chocolate Shortbread Cookies
With flour, cinnamon, sugar and butter

Chef Linda brings a long and varied list of experiences to the table, from teaching to penning a book on food history. She has extensive experience in cooking instruction with adults and children, and enjoys showing others how to recreate traditional dishes for those with food allergies or special diets. Chef Linda brings great flavors, accessible techniques and interesting stories together for delightful culinary experiences.
