Transport yourself to the Big Easy in this immersive cooking class. Chef John will teach you the quintessential flavors of vibrant New Orleans cuisine.
Cook up a classic chicken gumbo filled with brown rice, okra and tomatoes and spiced with Cayenne pepper. Master the technique to make the perfect blackened red snapper with Cajun spices. Whip up a homemade Béarnaise sauce to pair with the fish. Make spicy jalapeño corn fritters fried until golden brown and a creamy shrimp remoulade for sides. An indulgent velvety crème brûlée made with Gran Marnier serves as dessert.

Chicken Gumbo Soup

Blackened Red Snapper With Béarnaise Sauce
With wild-caught snapper, Cajun spices, tarragon vinegar, butter and eggs

Chef John was wonderful! From the moment we arrived and throughout the entire evening we felt we had been long time friends. He went thru each course explaining how each ingredient complemented dish and how they added to the delicious conclusion. Finally learned how to cut an onion correctly. The meal was truly special and showed why Chef John is one of the top chefs.

We attended the Tour of Japan class for our 13th wedding anniversary. Chef John was very hospitable, welcoming us into his personal home and kitchen. He demonstrated how to make several dishes such as miso soup, Wakame and cucumber salad, spicy tuna roll, poached salmon roll, and pineapple mango sorbet - all from scratch! He allowed us to be as hands on as we wanted, and we enjoyed assembling and rolling our own sushi rolls. Chef John was very knowledgeable and informative, and everything was delicious! Thank you for a memorable experience, Chef John!
