Cooking Class: Healthy, Plant-Based Mediterranean Meals
Indulge in the bright flavors of the Mediterranean in this engaging cooking class led by Chef Landi. Craft four plant-based courses while learning the techniques behind your favorite Mediterranean dishes.
To begin the class, you'll learn to make a toasted bruschetta piled high with tomato and basil and drizzled with olive oil and balsamic. Then, make a creamy lentil soup with truffle oil and topped with crunch croutons.
Next, a tumeric fettuccini pasta filled with fresh vegetables and tossed in a cashew cream and lemon juice sauce. Finish the meal with an indulgent no-bake cheesecake topped with granola and strawberries.

With toasted Italian bread, garlic, basil leaves, extra virgin olive oil and a balsamic reduction
Creamy Vegan Lentil Soup
With extra virgin olive oil, onions, garlic, carrots, celery, fresh parsley, cumin, oregano, homemade vegetable stock, lemon juice, truffle oil and croutons
Turmeric Fettuccine Pasta
With onions, garlic, mushrooms, green and red peppers, cherry tomatoes and spinach, and a sauce of garlic, lemon juice, vegetable stock, cashew cream and vegan butter
No-Bake Vegan Cheesecake
With raw cashews, unsweetened coconut yogurt, maple syrup, lemon juice, granola and strawberries

We had such a great experience. Chef Landi provided step by step directions and hands on opportunities in preparing our delicious meal. He shared his experiences as a chef and a good time was had by all.

Chef Landi began his culinary career many decades ago as a restaurant server in Italy. His passion for food led to a career with rapid growth as he quickly became confident in the kitchen, learning classical Italian culinary training. Upon relocating to the U.S. in 2001, Chef Landi channeled his culinary passions and valuable skills into a profession of culinary instruction. A highly-respected chef and instructor, Chef Landi is certainly someone to learn from.
