Join Chef Ricky for an interactive cooking class where you'll learn how to make pasta from scratch and fresh ricotta to use in a few timeless Italian dishes. First, you'll learn to prepare a traditional shrimp scampi with a light white wine sauce and fresh herbs. Then, layer your homemade pasta and ricotta cheese into a decadent lasagne al forno, a simplified yet elegant take on the classic lasagne. Then you'll sharpen your knife skills as you learn to prepare a vibrant vegetable ratatouille. For a sweet finish, you'll put your ricotta to use again, this time as a filling in sweet cannolis.

Chef Ricky was not only a well seasoned chef (pun intended), but a very kind and patient teacher. He is so welcoming and warm — and the food was delicious!! If I lived closer I would take more classes with him. Highly recommended!!

Chef Ricky is a research and development chef and chef instructor bringing nearly 40 years of professional culinary experience to the table. He notes his greatest achievements to be the development and launch of multiple successful Asian restaurants and business concepts, as well as coaching an American Culinary Federation team to two national championships. Chef Ricky specializes in Pacific Rim cooking and is passionate about helping aspiring chefs turn their dreams into reality.
