Cooking Class: The Wonders of Louisiana Gumbo

After learning about the heritage and techniques that define New Orleans cooking, you will prepare a traditional seafood gumbo starting from scratch. Clean, season and prepare a variety of seafood, like Gulf shrimp to include in your stew, after whisking together a browned butter roux. Slice and dice bell peppers, onions and celery to create the "holy trinity" or the New Orleans mirepoix, along with plenty of garlic and okra. Don't be afraid to be bold when seasoning your stew with a mixture of classic Cajun spices.
