Fluent in English and Portuguese, with intermediate Spanish skills, he infuses a variety of flavors, fragrances and textures into his recipes, which span the globe from Brazil and Australia to Tucson and San Diego.

Cooking with Paulo is hands down one of my favorite experiences to repeat. I’ve taken his sushi class a few times now, with adults, and even with kids, and it never disappoints. He is patient, knowledgeable, and so good at breaking things down in a way that feels simple and doable.
I’ve learned a wide variety of rolls, the food is incredible, and the whole experience is fun, informative, and interactive. It’s the perfect mix of learning and enjoyment, and I always walk away feeling confident (and very full!).
