Then, it's onward to casarecce alla Norma, a handmade pasta served with eggplant, tomatoes, basil, and ricotta salata. And your journey comes to a sweet, satisfying close with traditional cannoli made with ricotta, candied fruit and pistachios.

With more than 20 years of cooking experience, Chef Rudy has served in a wide variety of culinary capacities. He served as the Executive Head Chef and Owner of a Mediterranean and farm-to-table restaurant. His kitchen skills include developing menus and meals that follow dietary and cultural guidelines. Chef Rudy looks forward to sharing his life-long love of cooking and culinary knowledge with his guests.
