Start with a panzanella salad, a classic Tuscan starter made with pieces of baguette, tomatoes and aromatic basil and shallots. Master making pasta dough from scratch and the techniques for rolling and shaping it into a variety of pastas. As the pasta boils, prepare three classic sauces to pair with it. Whip up a creamy béchamel, simmer a fresh tomato sauce and prepare a simple, earthy pesto. Plus, use the tomato and béchamel sauces to make two derivatives, an aurora and an arrabbiata sauce.
