Chef Tracy puts a modern, healthy spin on traditional Southern comfort food in this creative cooking class. Master new culinary techniques and source fresh, nutritious ingredients as you prepare wholesome versions of old favorites.
Your four course dinner begins with Cajun soup, a lightened-up twist on gumbo with shrimp, green bell peppers, green onions, tomato juice and rice. From there, learn to prepare mushroom caviar with cherry tomatoes and succulent pork tenderloin with purple potatoes and turnips. For dessert, whip up an airy but indulgent chocolate mousse.

Meet your chef
Chef Tracy is not just a food connoisseur but also a former athlete, which informs her fresh, nourishing and healthy approach to cooking. She is experienced in both pastry work and savory cooking, both inspired by her love for whole-food ingredients. In 2008, Chef Tracy launched a popular healthy dessert business. She also has an extensive teaching history, having led corporate cooking classes and nutrition workshops for a number of major companies. When she's not cooking, Chef Tracy is writing about nutrition or sharing her healthy recipes.
