Team Building Activity: Make a Winning Pasta

Stoke the fires of competition in this exciting, hands-on team building activity where you and your group will work together to create an Italian feast. With advice and instruction from Chef Chris, you’ll start with a fresh Panzanella salad tossed in a homemade dressing. Next, you’ll try your hand at handmade spinach-ricotta ravioli and butternut squash tortellini in a brown butter, sage toasted hazelnut sauce. For dessert, you’ll celebrate your competitive spirit with a rich vanilla panna cotta.

Panzanella Salad

With ciabatta, heirloom tomatoes, garden basil, extra virgin olive oil, wine vinegar and sea salt


Handmade Spinach-Ricotta Ravioli and Butternut Squash Tortellini

With eggs, flour, baby spinach, ricotta and Parmesan; butternut squash, Parmesan and nutmeg


Brown Butter, Sage and Toasted Hazelnut Sauce

With butter, garden sage and hazelnuts


Vanilla Panna Cotta With Rosemary Salted Caramel

With pure vanilla, heavy cream, cornstarch, brown sugar, butter and rosemary

I know the problems I had weren’t Chef Chris’ fault but the room we were supposed to be in was occupied so the room we did have was freezing! We had to keep taking breaks which made the process longer. I wish we had been able to make the sauce as well. Class ran a little over. Nonetheless, chef was amazing and very helpful even with all the participants. I would take the class again because I definitely enjoyed the atmosphere

This was a great experience with Chef Chris! Great for nice casual date night or hang with friends of you're looking to learn and try something new! We had a great time, and I think our pasta came out pretty good!

The class was already three hours in and he had not yet cooked anyone’s pasta (he had one pot for 25 people) plus we had to make the sauce. He was generally rude and dismissive of my group. The room was also freezing cold. I literally left early with raw pasta and two pieces of basil.

Ever since then, he has been following his passion of cooking and teaching with a focus on regional Italian cuisine. He even co-founded a culinary event business to highlight his skills.
