Cooking Class: A Taste of Japan

In this hands-on class with Chef Shinya, you will learn how to prepare authentic Japanese cuisine across an impressive display of six courses. 

First, Chef Shinya will begin with some classic Japanese dishes, including a salty seasonal miso soup and a fresh field green and shredded cabbage salad. You'll also learn how to master the art of dumplings with hearty pork gyoza dumplings, as well as juicy shrimp gyoza dumplings stuffed with a variety of meats, cabbage and vegetables. You'll also learn to whip up takikomi gohan, a traditional Japanese rice dish, as a savory complement to your meal.


Seasonal Miso Soup 

With miso paste, dashi, seasonal vegetables and wakame

Field Green and Shredded Cabbage Salad 

With an onion-ponzu dressing

Pork Gyoza Dumplings 

With shredded cabbage and Japanese garlic chives

Shrimp Gyoza Dumplings 

With ground pork, shredded cabbage and onion

Dipping Sauce 

With soy sauce, rice vinegar, garlic chili sauce and sesame seeds

Takikomi Gohan 

With 50% milled rice, dashi, soy sauce, sake, mirin and seasonal vegetables

Chef Shinya’s sushi class is a wonderful experience that my husband and I enjoyed very much. Would recommend this class to anyone interested in learning how to make sushi at home. Chef Shinya is a great teacher and wonderful host.

It was amazing experience to join this cooking class. Chef Shinya is very professional, friendly, as well as informative. The class is easy to learn and replicate at home. The food ingredients are fresh and taste excellent. The fresh wasabi is the best. We will definitely come again.

Chef Shinya is a Japanese chef who specializes in traditional dishes from his home country enhanced with local flavors and ingredients of the West Coast. His combination of both classic Japanese techniques and native ingredients makes for dishes that are truly unique. Chef Shinya has lots of industry experience, having worked as both a culinary instructor and chef trainer. He also formerly owned a restaurant that earned three stars from Seattle Times.
