Ingredients

Sparking wine, such as Champagne or Prosecco
Rye whiskey, Cognac or brandy
Simple syrup or sugar cubes
Peychaud's Bitters
Angostura Bitters, optional
Ice
Water
Lemon
Good quality absinthe, such as: St. George, Copper & Kings, Jade 1901, Mansinthe, Vieux Pontarlier, Leopold Bros, Pernod (not Pastis), Absinthe Ordinaire and Duplais. Czech or bohemian-style absinthe and anise spirits are not recommended.

Kitchen Equipment

Absinthe glass or something that can hold over 6 oz
Champagne flute or coupe glass
Two rocks glasses
Slotted spoon or alternative
Bar spoon or alternative stirring tool
Vegetable peeler or paring knife
Muddler, optional unless using sugar cubes
