Ingredients

**For the Sofrito**
• 3 tbsp olive oil
• 1 large onion, chopped
• 1 red bell pepper, chopped
• 4 cloves garlic, minced
• 1 cup diced tomatoes (fresh or canned)
• 1 tsp smoked paprika
• ½ tsp saffron threads

**For the Paella**
• 1½ cups paella or medium-grain rice (Bomba or Arborio)
• 4 cups seafood or chicken stock
• 1 cup dry white wine
• 8 littleneck clams, scrubbed
• 8 mussels, scrubbed and de-bearded
• 12 large prawns (shrimp), peeled and deveined
• 1 cup frozen peas
• Salt and pepper to taste

**For Serving**
• ½ cup fresh parsley, chopped
• Lemon wedges

**For the Sangria (optional pairing)**
• 1 bottle Pinot Grigio
• 2 lemons
• 1 large orange
• ½ cup simple syrup
• Ice cubes
• Cocktail cherries

This experience was so far above my expectations. First, the food was amazing! I consider myself a foodie, so I don’t give that praise lightly. But what I was really amazed by was the fun that we had just interacting, talking, sharing stories. It was like having your best friends over for dinner. It felt like we had known each other for years! Chefs Gigi and JT brought light and laughter to the occasion and we had the most joyful night. I can’t recommend them highly enough!

Chef GiGi and JT absolutely blew us away with their incredible Italian and Creole fusion meal! They came to my home and prepared a delicious three-course dinner that was nothing short of amazing. The flavors were rich, unique, and beautifully balanced—every bite was better than the last. It was myself and two friends, and we all had such a fun, memorable evening. GiGi and JT weren’t just fantastic chefs; they had great personalities and were so easy to talk to. We truly enjoyed chatting with them throughout the evening.
