Ingredients
• 4 green plantains
• 1 cup vegetable or canola oil (or as needed)
• 2 cups water
• 4 cloves garlic, minced
• 1 tablespoon kosher salt
• 1 lime, juiced
**Picadillo**
• 2 teaspoons olive oil
• ½ cup finely chopped red or green bell pepper
• 1 large shallot, finely chopped (about 1/3 cup)
• 1 large clove garlic, minced
• ¾ pound 90% lean ground beef
• 3 plum tomatoes, finely chopped (about 1 cup)
• 6 manzanilla (pimiento-stuffed) olives, thinly sliced
• 1 teaspoon capers, rinsed
• 1 teaspoon ground cumin
• ¼ teaspoon salt
• ¼ teaspoon ground pepper
**Fennel Salad**
• Fresh fennel bulb
• Fennel fronds (used as an herb)
• Lemon (use both zest and juice)
• Extra-virgin olive oil
• Kosher salt
• Cracked black pepper
**Coconut Rice**
• 1 ½ cups jasmine rice, rinsed
• 1 (14-ounce) can full-fat coconut milk
• 1 ¼ cups water
• 2 teaspoons granulated sugar (optional, for a hint of sweetness)
• 1 ½ teaspoons kosher salt
**Garnish**
• 1 lime, juiced
• Cilantro, chopped (optional)

This experience was so far above my expectations. First, the food was amazing! I consider myself a foodie, so I don’t give that praise lightly. But what I was really amazed by was the fun that we had just interacting, talking, sharing stories. It was like having your best friends over for dinner. It felt like we had known each other for years! Chefs Gigi and JT brought light and laughter to the occasion and we had the most joyful night. We had so much fun with Chef Legina and her crew! We are a rowdy bunch and they knew how to handle our craziness. The pasta was delicious and the class was pretty well organized.

Chef GiGi and JT absolutely blew us away with their incredible Italian and Creole fusion meal! They came to my home and prepared a delicious three-course dinner that was nothing short of amazing. The flavors were rich, unique, and beautifully balanced—every bite was better than the last. It was myself and two friends, and we all had such a fun, memorable evening. GiGi and JT weren’t just fantastic chefs; they had great personalities and were so easy to talk to. We truly enjoyed chatting with them throughout the evening. Their energy and passion for what they do made the night even more special. Highly, highly recommend them for anyone looking for a unique and flavorful private dining experience/cooking class. We had a blast!
