Then, grill tender skirt steak for a classic lomo saltado, served with rice and a savory tomato, red onion and soy reduction. Next, make papa a la huancaĂna with a creamy ajĂ amarillo sauce, queso fresco, botija olives and hard-boiled eggs. End with arroz con leche, a comforting rice pudding infused with cinnamon and cloves.
