As the class begins, you'll learn the proper technique for making caramelized onions with a perfect golden brown finish. Then, use the onions to make a savory broth for French onion soup topped with melty Gruyère cheese. Next, you will choose between two main course dishes. Braise tender chicken in rich red wine with mushrooms and onions to make a decadent coq au vin. Or make a savory beef Bourguignon, a braised stew with red wine, carrots and onions. Learn how to make fresh pastry dough for tarts filled with seasoned fruit for an indulgent dessert to end the meal.

Chef Damon was delightful and the food fantastic. We thought we would be participating more but it was a wonderful experience. Still waiting on the recipes as promised.

Chef Damon is a seasoned epicurean with years of experience as an executive chef and cooking instructor. Trained in classic French culinary techniques and holding two culinary degrees, he has four medals from the American Culinary Federation for professional competitions. With a track record of successfully launching restaurants and owning an eco-friendly catering business, Chef Damon combines culinary expertise with a passion for sustainable practices.
