Cooking Class: Passed-Down Mediterranean Traditions
Explore the flavors of the coast in this immersive cooking class with Chef Washington.
Class begins by blending chickpeas, garlic, tahini and olive oil for a creamy Mediterranean hummus. Next, learn how to bake a flaky tilapia flavored with lemon and garlic made juicy with butter and extra virgin olive oil. Chop bell peppers, carrots and zucchini and slow roast them for a turmeric couscous pilaf to serve as a side. Roast chicken thighs until golden and tender, served with tahini and yogurt for a vibrant roasted chicken shawarma. Finish the meal on a sweet note with pears poached in red wine, drizzled with honey and sprinkled with cinnamon.

Epic.. a really great experience today with chef Washington. He brought it into a whole personal experience with friends, just cooking together. We were a team making some outstanding Mediterranean food. I would highly recommend this and hope to do it again soon! The only downfall wasn’t the chef or anything to do with him. It was the fact that I didn’t know a location of where it would take place until after I paid. Then it turned out being at our house, with friends. Which was fine and fun, but unexpected, And this was an impromptu booking. We were expecting/hoping it to be in a commercial kitchen somewhere. That being said, I’d do it again in our own kitchen, but with more time for us to prepare.

I liked the class, but wish we had recipes to take with us. FOr e.g., I'd like to know what the ingredients were for the duck and lamb jerk fillings for those tacos. It was more like Chef was making us a meal (which was delicious) as opposed to us learning how to make it.
