Cooking Class: Introduction to Tamales

Chef Alec introduces you to an elevated version of a Mexican favorite in this cooking class brimming with flavor and tradition. From savory to sweet, there's a filling to satisfy every tamale fan in the group! You'll learn to prepare a basic masa, a corn dough softened with pork fat and flavored with chicken stock, and a dessert masa sweetened with sugar. Then, you'll use your masa to create chicken tamales with salsa verde and sweet roast pumpkin and walnut tamales with brown sugar and raisins.

Sweet Corn Masa Dough 

With butter, sugar and baking powder


Chicken With Salsa Verde Filling 

With tomatillos, green peppers, jalapeños, parsley, cilantro and cumin


Sweet Roasted Pumpkin and Walnut Filling

With condensed milk, eggs, raisins, brown sugar and spices
