Begin by putting a wonderful twist on classic hummus by including the bold flavors of red curry and pumpkin. Serve this creamy dip with fresh, colorful vegetables. Next, craft a rich, hearty green curry simmering with fresh eggplant, broccoli, cauliflower and onions and served over a bed of rice. For dessert, whip up a tropical and refreshing mango coconut pudding topped with mint and cherries.
