Start by enjoying a raw gazpacho made from tomatoes, avocado and basil. Then, you'll assemble fresh cucumber rolls filled with homemade vegan cashew cheese. Up next, for your entrée, you'll learn how to make vegan pad Thai featuring zucchini, lime, lemongrass and a creamy homemade peanut sauce. Finally, you'll end with a sweet and healthy dessert: raw chocolate ice cream topped with fresh berries.

Chef Peggy brings a refreshing approach on cooking. I loved how simple and fresh her ingredients were. It reminded me that food doesn't have to be complicated to be healthy.
