First, you'll learn how to make the perfect omelette the French way, perfectly silky and custardy, using authentic French cooking techniques. Add in savory ham and Gruyère cheese for a complex flavor profile. Next, craft Duxelles mushrooms with shallots, red wine vinegar and cognac for a depth of flavor. Learn the technique of French emulsion to craft a silky beurre blanc with butter and white wine, seasoned with aromatic shallots, garlic and fine herbs.
