Discover the basics of making cheese from scratch in this engaging cooking class. Led by Chef Mary, you'll learn the techniques and recipes for making fresh ricotta cheese. You'll use milk, vinegar and salt to make creamy ricotta that has multiple uses in the kitchen. Beyond using it as a traditional ricotta, you can press it to use as paneer for Indian dishes. You can also blend it until smooth to make cream cheese. You can then flavor it to make a spread for bagels and toast.

I am always mesmerized watching her spinning her magic. No, not everyone can do that, but what’s special about Mary is when you watch her creating, you feel like you can go home and do the same thing! Somehow she takes the fear out of what might appear to some as an intimidating recipe. Her easy and laid back manner and approach to cooking is quite frankly refreshing. Well educated, traveled and versed, she is absolutely the real deal.
