My name is Maria Salgado and I was a student of Chef Lorna Martinez at the Culinary Academic school, during my time in the Baker's program I learned more than I could have imagined before starting it. I was very afraid at first because my English is not 100%, but Chef Lorna gave me confidence and motivation to move forward. Her educational system was so clear and so fluid that I was motivated to go ahead and take the course for the second time, despite having obtained 95% knowledge. I can confidently assure you that her ability to teach is very efficient, and I would gladly take another course with her again.

I recently had the pleasure of taking a baking course with Chef Lorna, and it was an exceptional experience from beginning to end. Her meticulous attention to detail and extensive knowledge of pastry made every lesson both engaging and accessible. She clearly explained the science behind each technique, whether creaming butter and sugar for cookies or understanding how yeast activates and develops the gluten structure in dough. I am writing to share a review of my experience with Chef Lorna. Overall, I found the instructions to be positive, helpful, insightful. I especially, appreciated the focus on key mixing techniques and flavor profiling and the way Chef Lorna managed the kitchen environment. One of the most valuable aspects of the course was mastering technique and science behind everything we did. This has significantly helped me improve my skills in the pastry shop I work at now. I met Chef Lorna as a student at CALV and eventually worked under her supervision after I garduated. I'm a visual learner and the fact that she does a demo before letting us do the recipe always helped me. She's also very thorough with her explanations, she will answer any question a student has without making them feel less. As one of her former employees, her communication is great. She allows us to have some creative freedom which made work really fun! I learned so much under her as a student and as a baker. She doesn't hesitate to share what she knows.
