Cooking Class: Mastering French Foundations

Chef Peter will teach you the foundational skills of French cuisine in this hands-on cooking class. 


Start the class by practicing your knife skills to chop celery, carrots and onions for a traditional mirepoix. Make a stock using bone-in chicken legs and your fresh vegetables. And finally, transform your creations into a hearty chicken noodle soup with bay leaf and capellini noodles. You'll also learn to make a classic roux, the base of a creamy Béchamel sauce, which will be used to create a decadent lasagna layered with San Marzano tomatoes, basil and ground meats. Chef Peter will also teach you the Maillard reaction to cook a perfectly seared steak every time and finish it with butter, thyme and sea salt.
