Join Chef Rae for a vegan take on classic Italian dishes in this hands-on cooking class. Using plant-based alternatives, the chef will show you how to enjoy this beloved cuisine without meat, eggs or dairy. Start by preparing a Caprese salad with cashew milk mozzarella and white truffle vinaigrette. Next, learn how to make focaccia by hand. Enjoy polenta in a hearty mushroom and tomato sauce for your main course. Finish the meal with a creamy, dairy-free panna cotta topped with strawberry sauce.

We had a fantastic time with Chef Rae. She was such a joy to cook with. She even taught us a new way to make our favorite dessert.
Chef Rae’s culinary career began when she served as a cook in the U.S. Army. Though her work life initially led her in a different direction, her passion for cooking and talent for self-teaching never faltered. She explored various global cuisines and completed a degree in Culinary Arts, aiming for a career as an executive and private chef. Chef Rae loves helping others find their footing in the kitchen creating delicious meals from scratch.
